On the most recent nativity scene it shows 1/4 stock to use but the board they sell at Home depot is 1 "

My Home Depot has a selection of 1/2" and 1/4" shorter stock somewhere close to where they sell the Oak, Popular and Clear Cedar lumber. Also if you have a table say, and as small as the Nativity pieces are you could resaw 1" to thickness on the table saw. On the internet you can order 1/4" boards in different widths and lengths. Places like Ocooch:
