When intarsia patterns suggest white what wood and/or stain are you guys using? I can't find white gel stain.

I have used Holly for segmentation, although it is hard to come by. It can have a 'yellowish' look to it as well, but is pretty white for the most part.

I use basswood. The whitest wood I have found and pretty cheap.

I use basswood, aspen or the white wood from aromatic Cedar. If you can't find that look for a Glaze from General Finish called "winter white"

Is there a good supplier of the various coloured woods or is it a case of 'see what you can find' sort of thing. With segmentation being more popular, I would have thought that a good supplier should get plenty of business?

Check for Hardwood suppliers in your area. I am able to buy All North American hardwoods & exotic hardwoods locally within about 40 minute drive from Winston Salem NC. I actually don't buy much off the internet but the internet has a lot of wood suppliers for Intarsia

I have used Alder for white wood. It is cheap and easy to come by.
