Filet and Release -- A Steve Good pattern

When Steve posted this pattern the other day, I knew I had to make it for a friend.  Then my wife suggested a family member.  So I have two for now:

1st one:  Pattern:  Steve Good
              Wood:     Alder  1" thick
              Finish:     None yet.

2cd one:  Pattern:  Steve Good
              Wood:     Pine
              Finish:     None yet.

My only problem with the pattern is the word: Filet.  I looked it up and it is correct, but I've always used fillet (with two L's).  (By the way the spell checker here doesn't recognize it.)

So I question each viewer, should it be "filet" or "fillet"?  What do you normally use?

Hey Karl, My spell checker (my wife) says it is spelled with one L.
Nice cuttings by the way!
P.S. IE spell checker says it is spelled with two Ls!

As for the finish I don't know.  I like the look of Alder and will probably use a spray lacquer.  Pine looks nice, but it already has too many fuzzies on it so any water stain is out.  (The Alder had very little fuzzies and what was there was easily removed with my flutter wheel.)  I may use Golden Oak on it with a spray lacquer on top.

Other ideas?

If you Google the spelling of Filet.  if it has to do with fish it is Filet.  Fillet is a welding term.
