I have used Tru-oil on several projects lately.  It is gun stock refinishing oil.  It makes for a beautiful glossy finish if you put enough coats, but you can leave it so the grain of the wood shows.  It only slightly darkens the wood but is durable.  This is by Birchwood Casey and usually found in sporting goods stores although i have found it at WalMart on occasion.  i used it on the fret basket and the inlay box with beautiful results.  I would post pictures if I knew how  :)
Try it on flat projects because it is difficult to cover fretwork effectively.  Steve's process of dunking in lemon oil still seems best for fret projects.
