Banh Mi sandwiches

Todays Banh Mi sandwich day in this household.  This morning I ground my Thai rice into flour and baked rice and wheat bagettes.
I made a vietnamese coleslaw and marinaded my thinly sliced pork with garlic, onion, lemongrass,fish sauce, brown sugar, lemon juice and soy sauce.
Sliced up a jacima and pickled it.  I also have some sprouts and cucumber on hand.
I can't get diakon radishes in Northern Wisconsin.
If anyone loves Banh Mi you might like to know that in July a cookbook titled 100 Banh Mi sandwiches is going to be released.  Its authored by Jackie Pham.
I'm on vacation this week so I have to finish my crayfish traps that I'm making.  I making them to look like lobster traps.  I love crayfish pie and it gets me in my kayak and I plan on bass fishing between setting my traps and picking them up.
