What finish can you put on wooden coasters that will not leave a white ring after putting a cup of coffee or glass of water on the coaster? I know shellac will not work.

I second what Bill said.
However you can use shellac or BLO to seal and/or pop the grain to start with as long as you finish up with two or three coats of poly or epoxy as a protective coat.
