I have been selling on ebay for about 20 yrs NOT woodworking items mostly old automotive and electronic items and have had only a few problems.  Any selling in today's computer oriented markets is very competitive. Handmade items are always subject to the buyers opinion as  once they receive the item it may not look exactly like it did in the photos.
  For ebay I figure about a 15% overhead .

As stated above any wood you like is ok a soft wood will cut easier but will need a conditioner/sealer to keep the stain color more even . A hard wood will be harder to  cut (just cut a little slower and more blade changes) but will stain more evenly.
 For stains I have been using the gel stains and find they are easier to work with.

Sound like a interesting project.
This has me thinking back in the early 70's when i was in the navy , there was a few times I would have like to have my chiefs skull on the table  ;D
