Maple seems to have a tendency to tear for me as well.  I see the same fibers when cutting it.

I found it a very hard wood.  Dulls blades and router bits quickly but it sure is pretty.

Try a nice coat of shellac on poplar first.  That seems to help with the blotching..JMHO

I prefer 1/4"  It is more durable than 1/8" .  I usually use 1/4" poplar 5 ply for jigsaw style puzzles.  It seems to saw/cut better and does not use blades as fast as Oak for example.   I would not recommend planing down plywood.  You will end up with a mess.
