Title: Poly and Paint

I was wondering, can you spray poly over paint?  and how about stain?

Yes you can poly over paint and stain. The normal poly is oil based and amber-yellow in color and may change thecolor of paint, white is really noticeable it turns kind of snotty colored (my 7th graders words, I warn them before we poly their painted projects) the water based poly doesn't discolor paint as much. 
I still recommended that you test your paint and project. Sometimes brushing the poly on can do odd things.

Yea I use poly over both all the time. If You are using spray poly for a little shine you shouldn't have any problems at all. Like mrsn said if you are brushing definitely test because you will be putting on a much thicker coat. And I don't use oil based at all. I can get the same results with water based with much easier cleanup..
