I have cut a couple little small oriental style fish from 5/8" bamboo flooring pieces I picked up at the Habitat for Humanity Re-Store.
I used 2/0 spirals and it cut fine. Due to the nature of the 'flooring' material it was a bit tough because of the adhesives in the laminating but overall it was no problem to cut.
I,too, picked up a set of 3 cutting boards from WOOT.com & I plan to use them in the near future.

I have used a number of bamboo cutting boards for projects. It cuts really nicely, sort of powders away.
